Loaded Nachos

What You'll Need
  • 1/2 lb ground beef or turkey
  • 1 tsp chili powder
  • 1/2 tsp Oregano
  • 1/4 tsp salt
  • 1 can diced tomatoes, undrained (14.5-oz)
  • 1 garlic clove, crushed
  • 1 can re fried beans (16-oz)
  • 1 can green chilies (6-oz)
  • 1 1/2 tbsp Cilantro, chopped
  • 1 tbs green onion, sliced
  • Jalapeno slices to taste
  • Sour Cream to taste
  • 1 1/2 cups shredded Mexican Blend cheese
  • Tortilla Chips

What To Do
  1. Preheat your oven to 475 degrees.
  2. Brown the ground meat in a skillet and if there is excess fat, drain it off. Add the meat back to the pan and add in your chili powder, Oregano, salt, tomatoes, and garlic, cooking until reduced.
  3. In a separate, small pan sprayed with cooking spray, warm the can of beans, green chilies, cilantro, and green onions.
  4. Spread a few handfuls of tortilla chips over a foil-lined cooking sheet and evenly spoon the bean mixture over the chips, followed by the meat mix. Top your nachos with the cheese and bake for 10 minutes, or until the cheese is melted.
  5. Once out of the oven add jalapenos, sour cream, and additional Cilantro and green onions to taste.
