Blueberry Muffins

What You'll Need
  • 2 cups self-rising flour
  • 1 1/2 cups sugar
  • 2 eggs, lightly beaten
  • 1 tsp vanilla
  • 1/2 cup vegetable oil
  • 1/2 cups whole milk
  • 1 cup blueberries (frozen or fresh)

What To Do
  1. Preheat your oven to 375 and line your muffin tin.
  2. Combine the flour and sugar in a large bowl.
  3. In a small bowl combine your eggs, vanilla, oil, and milk, whisking together until mixed.
  4. Make a well in the center of your flour mixture and pour in the liquid. Mix together until moistened.
  5. Gently fold in blueberries and spoon your batter into the muffin tin. 
  6. Bake for 20-25 minutes.
* *To keep the blueberries from sinking to the bottom of the batter toss them around in a tablespoon or two of flour before you add them to muffin batter**

This recipes makes 18 scrumptious muffins. I believe, (it's been a few years since I received this recipe) non other than Paula Dean concocted this recipe- gotta give credit where credit is due!
