- 2 cups self-rising flour
- 1 1/2 cups sugar
- 2 eggs, lightly beaten
- 1 tsp vanilla
- 1/2 cup vegetable oil
- 1/2 cups whole milk
- 1 cup blueberries (frozen or fresh)
What To Do
- Preheat your oven to 375 and line your muffin tin.
- Combine the flour and sugar in a large bowl.
- In a small bowl combine your eggs, vanilla, oil, and milk, whisking together until mixed.
- Make a well in the center of your flour mixture and pour in the liquid. Mix together until moistened.
- Gently fold in blueberries and spoon your batter into the muffin tin.
- Bake for 20-25 minutes.

This recipes makes 18 scrumptious muffins. I believe, (it's been a few years since I received this recipe) non other than Paula Dean concocted this recipe- gotta give credit where credit is due!
